Banana Crumb Muffins

This muffin recipe comes from my friend Kristine and is absolutely delicious. They're easy to make, no tricky ingredients, and the crumb topping makes them oh so good. These might be the perfect banana muffin, if I do say so myself.

Ingredients:
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
1/2 cup white sugar
¼ cup brown sugar
1 egg, lightly beaten
1/3 cup butter, melted

Crumb Topping:
2 T packed brown sugar
2 T all-purpose flour
2T quick oats
1/4 teaspoon ground cinnamon
1 tablespoon butter (cold)

Directions:
Preheat oven to 375 degrees F. Lightly grease 12 muffin cups, or line with muffin
papers.
In a large bowl, mix together first set of dry ingredients. In another bowl, beat
together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour
mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together topping ingredients. Cut in 1 tablespoon butter until
mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center
of a muffin comes out clean.
Enjoy!

Yields 12 muffins

Frosted Banana Cookies

These are some of my very favorite cookies.
They taste like the most delicious banana bread in cookie form
with the added bonus of brown sugar frosting.
Delicious!

Cookies:
3/4 cup butter
3/4 cup white sugar
1 egg
1/2 tsp. vanilla
2 bananas (mashed)
1/4 tsp. salt
1 tsp. baking soda
2 cups flour

Frosting:
6 tablespoons brown sugar
4 tablespoons butter
4 tablespoons milk
1/2 tsp. vanilla
powdered sugar (until the right consistency is achieved)

Cookies: Cream butter and sugar. Add in egg and beat until fluffy. Mix in vanilla, banana, salt, soda and flour and beat until combined. Bake for 8 minutes at 350 degrees. Let cool.

Frosting: Combine brown sugar, butter, milk and vanilla in a sauce pan and bring the mixture to a boil. Add in the powdered sugar until a frosting like consistency is achieved. Frost cooled cookies immediately.

Makes 2 dozen cookies.

Nie Nie's Banana-Chocolate Chip Bread

This bread is tasty tasty and easy to make. The sour cream (I used plain yogurt) gives it the most moist texture and the chocolate chips make it a tempting option for breakfast, lunch, dinner and dessert. Make it. You'll love it :)


  • 1/2 cup (1 stick) butter, at room temperature, plus more for pan
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups whole-wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mashed very ripe bananas
  • 1/2 cup sour cream (I used plain yogurt)
  • 1 teaspoon vanilla
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees;. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in chocolate chips and pour into prepared pan.
  3. Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

Easy Banana Muffins

I was looking for a quick and easy banana bread recipe and this definitely hit the spot! A great way to use up those extra over-ripe bananas, plus a tasty breakfast :)

1 1/2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
dash of nutmeg
2-3 ripened bananas (about 1 cup mashed bananas)
1/2 cup granulated sugar
1/4 cup brown sugar
1 egg
4 tablespoons melted butter

In a large mixing bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon and nutmeg. Set aside. In another mixing bowl, mash the bananas and add the sugars, egg and melted butter. Whisk together until smooth. Add to the dry ingredients and mix just until combined. Don’t over mix. Evenly distribute between 12 muffin cups that have been sprayed with non-stick spray. Bake at 350 for about 15-20 minutes.

Banana Muffins

These muffins are delicious! The sour cream makes them so moist and the touch of cinnamon adds a great taste.
2 cups flour
3/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 cup vegetable or canola oil
1/4 cup apple sauce
3/4 cup brown sugar
3/4 cup sugar
2 tsp vanilla extract
1 1/2 cups over ripe bananas, mashed (About 3 large bananas)
1 cup light sour cream
2 eggs

Makes about 12 large muffins or one loaf of banana bread.

Preheat oven to 350 degrees. Grease muffin tins.

In a bowl stir together flour, salt, baking soda, baking powder, and cinnamon. Set aside.

In a large mixing bowl combine oil, apple sauce, brown sugar, and white sugar. Add in the vanilla extract, mashed bananas, sour cream, and eggs.

Stir in dry ingredients until combined. Pour into muffin tins and bake for 20 to 25 minutes. Let the muffins cool for about 10 minutes before placing on a wire cooling rack.

Banana Bites

How delicious do these look!?!


I found these treats on the blog Framed (originally featured in Bon Apetite)
and cannot wait to try them!

2 cups chocolate chips
2
tablespoons vegetable oil
Assorted toppings for coating bananas (such as crushed oreos, toffee bits, chopped Butterfinger candy bars, chopped salted peanuts, or toasted shredded coconut)

bananas, peeled, cut into 1/2-inch-thick slices
  1. Stir chocolate and oil in heavy small saucepan over low heat just until smooth. Let stand 15 minutes to cool.
  2. Place each topping in separate shallow dish. Line baking sheet with foil. Arrange banana slices on foil. Using fingers, dip 1 banana slice in chocolate, coating completely. Shake off excess chocolate. Drop dipped banana in 1 topping. Using clean hand, sprinkle more topping over banana to coat; transfer to foil-lined sheet. Repeat with remaining bananas, chocolate, and toppings. Freeze until firm, about 3 hours, then serve.

Chocolate Chip Banana Bread

My friend Kristine is an amazing cook and made this chocolate chip banana bread a few days ago. It was absolutely delicious and I had at least 2 (maybe 3) pieces! Thanks for the recipe, Kristine!


Ingredients

* 2 sticks Butter
* 1 cup granulated Sugar
* ¾ cup brown sugar
* 3 whole Eggs
* 1-½ cup Mashed Ripe Bananas (About three large bananas)
* 3 cups Flour
* 1 teaspoon Baking Soda
* 1-½ teaspoon Baking Powder
* 1-½ cup Sour Cream
* 1- ½ teaspoons vanilla extract
* 1- ½ cups chocolate chips

Directions

Preheat oven to 350 degrees.

Grease and flour Bundt pan.

Cream butter and sugar together. Add eggs one at a time, beating for a few seconds after each addition. Add mashed bananas and vanilla and beat.
Combine dry ingredients in a separate bowl.

Add dry ingredients and sour cream alternately to the mixing bowl. Beat well until all combined.

Pour into Bundt pan and bake for 1 hour 10 minutes or until a toothpick comes out clean.

Invert on a cooling rack and allow cake to cool slightly before slicing and serving with softened butter or cream cheese!

Betsy's Banana Cake

I'm not a huge cake fan, but THIS ONE is one of my very favorites. My Nana, Betsy, first made this cake and my entire family fell in love with it. I like to make it on Memorial Day topped with cream cheese frosting and decorated with strawberries and blueberries to make the American flag.


2/3 cup butter
2 1/2 cup flour
1 2/3 cup sugar
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/4 cup ripe bananas (mashed)
2/3 cup buttermilk
2 large eggs
2/3 cup chopped nuts

Sift dry ingredients (flour, baking powder, baking soda and salt) and set aside. Cream butter and sugar and add sifted dry ingredients to creamed mixture. Add the mashed bananas and milk. Beat for 2 minutes and then add the eggs. Beat 2 more minutes. Stir in nuts. Pour batter into a greased 9x13 pan and bake for 45-50 minutes (or until toothpick comes out clean )in a 350 degree oven.

Frosting:
1/4 cup butter
8 oz package of cream cheese
1-2 cups powdered sugar
1/2 tsp. vanilla extract
