3 cans black beans-drained
2 lg. eggs
3 c. bread crumbs
1 cup chopped red bell pepper
½ c. chopped green onions
½ cup chopped cilantro
2 cloves garlic-minced
2 t. chili powder
1 t. cumin
1 t. cayenne pepper
1 t. salt
½ t. onion powder
½ t. black pepper
4 T. olive oil
Purchased salsa
Sour cream and avocado slices
Puree beans and add other ingredients. Form cakes and sauté in oil until slightly browned on each side. Serve with salsa, sour cream and avocado slices.
