Sweet Potato and Turkey Salad

I found this recipe in the local Lodi newspaper. I liked all of the ingredients but would have never dreamed of putting them together in a salad. I tried it one night, and for those in my family who love sweet potatoes, we devoured it. For the rest of the family, they ate everything but the sweet potatoes!!

I was excited yesterday to go to Costco and see that they had sweet potatoes -by the case of course! Now I can share some of my favorite ways to enjoy this good and good-for-you vegetable.


Ingredients:
2 medium sweet potatoes (or more!)
2-3 T. olive oil
1 lb. lean ground turkey
4-6 slices of bacon (we like a lot!)
1 medium yellow or red bell pepper
4 scallions (or green onions)
4 cups baby greens

1 or more cloves of garlic
1/4 c. olive oil
3 T. white wine vinegar
1 T. honey mustard
salt and pepper to taste

Peel and cube sweet potatoes. Toss with olive oil and grill or broil until tender. Brown ground turkey leaving it in large chunks. Season with salt and pepper. Cook bacon until crispy and break into small pieces. Dice bell pepper and scallions.

Make dressing by combining olive oil, vinegar, pressed garlic, honey mustard and salt and pepper to taste.

Put salad together by placing all ingredients in salad bowl and drizzle dressing over all. Toss gently.
Serves 4-6 people.
