As the days are getting colder, it seems my body craves the warmth of soup! I made this white bean chili last night and it was mighty tasty! It even got the stamp of approval from Joe :)
1lb dried Great Northern White Beans
2lbs chicken breast
1 T olive oil
2 medium onions (chopped)
4 garlic cloves
2 4oz cans green chilies
2 tsp. cumin
1 1/2 tsp. oregano
1/4 tsp. cloves
1/4 tsp. cayenne
6 cups chicken stock
3 cups jack cheese
sour cream
salsa
fresh cilantro
Soak beans overnight. Simmer chicken and cut into chunks. Saute onions, stir in garlic, chilies, cumin, oregano, cloves and cayenne. Saute for 2 minutes. Add beans, bring to a boil and simmer for 2 hours (or until beans are tender). Add chicken, 1 cup cheese and simmer until the cheese melts. Season with salt and pepper to taste. Serve with remaining cheese, sour cream, salsa and cilantro.
