Coconut Syrup

We discovered a favorite treat....Banana Pancakes with Coconut Syrup when we visited Jana at BYU Hawaii and she took us to the Hukilau Cafe for breakfast.  Of course we came home with a couple of bottles and made our own Hawaiian breakfast.  But I found an even better recipe to make-no preservatives and you don't have to go to Hawaii to get it.

1 can coconut milk
2 T. cornstarch
1 cup corn syrup
1 cup white sugar
1/2 tsp. vanilla

Stir the cornstarch into the coconut syrup in a sauce pan.  Add the corn syrup and sugar and heat until it comes to a boil.  Remove from heat and stir in vanilla.  Delicious!!
