I guess there is one good thing about cool weather and rain at the end of May.....we get to eat soup!! We had this Tortellini soup tonight and it was delicious.
Finely chop 1 cup of carrots, 1 cup of celery, 1 large yellow onion in a few tablespoons of olive oil and 1 T. butter. Cook until tender-about 10 minutes. Season well with salt and pepper
Add 1 1/2 quarts chicken broth-my new favorite is Organic Free Range Chicken Broth in a box
1 lb. cheese tortellini
1 can diced tomatoes-including juice from tomatoes. Cook until pasta is tender.
Serve with freshly grated parmesan cheese.
Great with crusty french bread!!
