Garden Vegetable Pasta Sauce
Usually, the delicious things I create in the kitchen are because I'm good at picking out and following great recipes that other people have created. But, I'm taking full credit for the yummy pasta sauce we had last night for dinner. Sadly, I had to use store bought zucchini, etc. because my garden is taking its time producing anything ready to use.
(use a food processor to chop all the vegetables and make this a whole lot faster! You decide how finely chopped you would like your sauce)
1 lg. yellow onion-chopped
4-6 cloves garlic-minced
Saute the onions and garlic in a few tablespoons of olive oil until they start to brown slightly
Add:
2 medium zucchini-chopped
1 cup baby carrots-chopped
Saute 7-10 minutes until vegetables are soft.
Add:
1 large can of crushed tomatoes
1 tsp. sea salt
1 tsp. freshly ground pepper
1 tsp. oregano
1 tsp. dried basil
1/2 tsp sugar
2 T. balsamic vinegar
a dash of cayenne pepper if you want a little kick!
Simmer to blend flavors.
Just before serving, stir in 1/2 cup freshly grated parmesan cheese
Serve over your favorite pasta! Incredibly healthy and delicious!!
