I have a dear friend who goes by Ann, or Wacky, or "The Nark". But no matter what we call her she is the best. And she makes the best bread!!
This makes 2 large loaves or 4 small loaves.
5 c. white flour
1 c. quick oats
2 c. whole wheat flour
6 T. sugar
2 T. yeast
2 tsp. salt
approx. 4 cups warm water
Dissolve yeast and 1 T. sugar in 2 cups of warm water. Let stand for about 5 minutes. Meanwhile, combine the dry ingredients. Add the yeast mixture to the flour. And then add JUST enough of the water to get all of the flour wet. It will be a sticky dough. Let stand for 1/2 hour. Grease pans and fill them 1/2 full. Places pans in a cold oven and let rest for 1/2 hour. Then set the oven to 365 degrees and set the timer for 35 minutes. Voila-delicious, nutritious wheat bread with very little work!!
