Aussie Bites (copycat recipe)

We love the Aussie Bites from Costco. They are the perfect balance of hearty snack and sweet treat, and everything they're made of is so good for you! I decided to try and make them myself since my mom has all of these awesome ingredients on hand in her pantry.



Ingredients
  • ½ cup dates, pitted
  • ½ cup dried apricots
  • 2 cups rolled oats
  • 1 tablespoon pepitas or sun flower seeds
  • 2 cups oat flour
  • ⅓ cup craisins (you could use raisins)
  • 2 tablespoons brown sugar
  • 1 tablespoon coconut flakes
  • 1 tablespoon chia seeds
  • ⅓ cup quinoa
  • ½ cup butter, softened
  • ½ cup canola oil
  • pinch of sea salt
  • 1½ teaspoons baking soda
Instructions
  1. Preheat the oven to 350 degrees and spray a mini muffin tin with nonstick spray.
  2. In a large food processor, pulse the dates and apricots until chunky/smooth.
  3. Add all remaining ingredients to the fruit puree and pulse to combine. Press the dough into the mini muffin holes (make sure it's really compact and not too full, the dough will rise!) and bake for 10 minutes. Repeat with remaining dough and store in an airtight container.
