1/2 cup coconut butter, softened
1/4 cup raw honey
1 scoop vanilla protein powder
2 Tbs. unsweetened shredded coconut
1 Tbs. lemon zest
1 tsp. fresh lemon juice
1/2 tsp. vanilla extract
dash of sea salt
3/4 cup old fashioned oats
Mix all ingredients together, adding the oats last. Use a cookie scoop to form into balls. Store in the fridge or freezer.
