Crumbl Copycat Honey Graham Cracker Cookie

 



Cookie dough

  • 1 cup graham cracker crumbs
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened at room temperature1
  • 1/2 cup brown sugar
  • 1/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper or spray with cooking spray
  2. In a large bowl, combine graham cracker crumbs, flour, baking soda, and salt.
  3. In a separate bowl, beat butter, sugar, and brown sugar together until creamy and smooth.  Add in egg and vanilla extract and continue to mix until well combined.
  4. Slowly add dry ingredients and mix until just combined.
  5. Scoop out about a tablespoon of dough and roll into a ball. Roll the cookie dough ball in the remaining graham cracker crumbs.
  6. Drop rounded dough onto a baking sheet.  Bake for 8-10 minutes or until edges are golden brown.
Frosting

  • 1/2 cup butter, at room temperature
  • 1/4 cup honey
  • 2-3 cups powdered sugar
  • milk as needed for thinning out frosting
  1. Cream together the butter and the honey for 2 minutes (in stand mixer with paddle attachment if available). Add 2 cups of the powdered sugar.
  2. Start on low speed on the mixer, beat until smooth and creamy, about 3-5 minutes.
  3. Gradually add the remaining sugar, 1 cup at a time, beating well after each addition (about 2 minutes), until the icing is thick enough to be of good spreading consistency. Use milk to thin out frosting to reach desired consistency.
