2 red or yellow bell peppers-chopped
1 onion-chopped
1 T. minced garlic
1 t. olive oil
2 lbs. ground lean beef or turkey
½ c. minced parsley
1 t. dried oregano
2 T. lemon pepper
2 c. purchased hummus
½ c. crumbled feta cheese
2 lg. tomatoes-chopped
½ c. chopped cucumber
¼ c. sliced green onions
8 pita bread-sliced
Saute bell peppers, onion, garlic in oil until slightly browned. Add beef or turkey. Cook until browned. Add remaining seasonings.
Create sandwiches by spooning in meat/hummus mixture, then top with cucumber, onions, tomatoes and hummus.
