Tamale Pie

2 lbs. lean ground beef or turkey
1 chopped onion
2 cloves garlic
1 can beans-drained (any variety)
¼ c. olive oil
¼ t. thyme
¼ t. pepper
15 oz. can diced tomatoes
12 oz. frozen corn
2 T. salt
2 T. chili powder
½ c. yellow corn meal
1 ½ c. milk
2 T. butter
2 c. shredded sharp cheddar cheese
3 eggs


Saute onions, garlic and meat. Add tomatoes, corn, salt, chili powder, thyme. Simmer for 10 min.

Topping:
Scald 1 ½ c. milk
Add ½ t salt and 2 T. butter and ½ c. cornmeal. Cook and stir and till thick and creamy
Add 1 c. shredded sharp cheddar cheese and 3 beaten eggs
Pour over top
Bake 375 for 40 min.
