This is a quick, healthy and delicious meat-less meal. I made a green salad, steamed some green beans and called it dinner.
3 cans black beans-drained
2 eggs
3 c. bread crumbs
1 c. chopped red bell pepper
1/2 c. chopped green onions
1/2 c. chopped cilantro
2 cloves garlic-minced
2 t. chili powder
1 t. cumin
dash (or more)cayenne pepper
1 t. salt
1/2 t. onion powder
1/2 t. black pepper
4 T. olive oil
salsa
avocado slices or guacamole
Puree beans in a food processor. Stir in other ingredients. Form cakes and saute in oil until slightly browned on each side. Serve with salsa and avocado or guacamole.
