Emma has been asking me to make this for weeks. It's my good friend Suzi's recipe and truly a "comfort food" of ours!
Make a roux by sauteing: 1/4 cup butter and 1/4 cup olive oil 1/2 cup chopped carrots 1/2 cup choppend celery 1/2 cup chopped onion
Add 1/2 cup flour and stir until flour cooks for a few minutes. Then add 1 quart chicken broth and 4 cups milk. Stir until well combined. Add 2 cups egg noodles and 2 cups diced chicken. Cook 10-15 minutes or until noodles are tender. Season to taste with salt and pepper.
