Betsy's Banana Cake

I'm not a huge cake fan, but THIS ONE is one of my very favorites. My Nana, Betsy, first made this cake and my entire family fell in love with it. I like to make it on Memorial Day topped with cream cheese frosting and decorated with strawberries and blueberries to make the American flag.


2/3 cup butter
2 1/2 cup flour
1 2/3 cup sugar
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/4 cup ripe bananas (mashed)
2/3 cup buttermilk
2 large eggs
2/3 cup chopped nuts

Sift dry ingredients (flour, baking powder, baking soda and salt) and set aside. Cream butter and sugar and add sifted dry ingredients to creamed mixture. Add the mashed bananas and milk. Beat for 2 minutes and then add the eggs. Beat 2 more minutes. Stir in nuts. Pour batter into a greased 9x13 pan and bake for 45-50 minutes (or until toothpick comes out clean )in a 350 degree oven.

Frosting:
1/4 cup butter
8 oz package of cream cheese
1-2 cups powdered sugar
1/2 tsp. vanilla extract
