Pasta Sauce Raphael

This is one of our family's all-time favorite pasta sauce....and it is even better on freshly made linguini!  It's from The New Basics cookbook and deliciously wonderful!

2 jars (6 oz) marinated artichoke hearts in oil-chopped
1/4 cup olive oil
2 cups chopped onions
2 T. minced garlic
1/2 tsp dried oregano
1/2 tsp. dried basil
1 T. ground black pepper
1/2 tsp salt
pinch of red pepper flakes
1 28 oz diced tomatoes in their juice
1/4 cup parmesan cheese
1/4 cup chopped parsley or 2 T. dried

Drain artichoke hearts, reserving the marinade.  Heat the olive oil in a large skillet.  Add the onions, garlic, oregano, basil, peppers, salt, red pepper flakes and reserved artichoke marinade.  Sate over medium heat until onions and garlic are soft-about 10 minutes.  Add the tomatoes and simmer for 30 minutes.  Add the artichoke hearts, parmesan cheese, and parsley.  Stir gently and simmer for an additional 5 minutes.  
Divine!
