Mexican Meat-zza!

I think Rachel Ray is adorable and her love of cooking and food is contagious.  I watched her make this the other day, and had to try it.  It's actually really good!

Mexican Deep-Dish Pan Pizza
serves 8
Crust:
(she used a cornbread mix....from scratch is almost as easy and better!)
1/2 cup flour
1/2 cup cornmeal
2 T. cup sugar
2 tsp. baking powder
1/4 tsp salt
1 eggs
1/2 cup milk
1/4 cup melted butter
Combine all ingredients and add 1 cup frozen corn (optional).  Place in an oven-safe 10-12 inch non-stick skillet that has been greased.  Bake for 10-12 minutes at 400 degrees or until light golden in color and center is done. 

Meat Topping:
Brown 1 lb. ground beef or turkey and
1 small chopped onion
Add:
1 T. chili powder
2 tsp. cumin
1/4 tsp cayenne pepper (more or less depending on your spiciness!)
Salt to taste
Vegetable Topping:
chop 1/2 red bell pepper
1 small can diced green chilies
2 green onions
minced cilantro
Cheese Topping:
2 cups shredded cheese-cheddar, jack or combination

When cornbread crust in done, remove from oven.  Top with meat, cheese, and veggies.  Put pan back into oven and cook 5 minutes more to melt cheese.  
Cut into 8 deep-dish pizza slices
You can top with sliced avocado and pass salsa on the side.
