Chocolate Mint Cookies

I came home from Trader Joe's the other day with a new item to try- Dark Chocolate Mint UFO's
They are large dark chocolate chips with a great mint flavor. Before I could eat them all out of the bag, Megan used them in delicious cookies. Good Bye Girl Scout Thin Mints.....





1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1/3 cup unsweetened cocoa powder
2 cups Dark Chocolate Mint UFO's-chopped into smaller chunks (they're huge!)

Cream butter and sugars well. Add eggs and vanilla. Add all dry ingredients and mix until just combined. Stir in chocolate chunks. Drop by tablespoon onto cookie sheet and bake at 350 for 10-12 minutes.

I have so many bags of these UFO's from TJ's. I was searching your blog for a good chocolate cake for my sister's birthday. But now I know a GREAT way to use those UFO's!!!

I made these because I had a bag of UFO's sitting on my counter that I loved to snack on.

I didn't love the cookies. I LOOOOOOVE mint, but they were a little too minty, even for me! So next time, I would use less UFO's. If I did that, I think they'd be perfect!
