Fruit Pizza

In honor of Megan's birthday, I'm making fruit pizza. I think she has requested this as her "birthday cake" for probably 15 out of her 19 total birthdays. It's beautiful and delicious and totally easy to make.

The Crust:
if you want a short cut, use Pillsbury sugar cookie ready-made dough
but this recipe is easy and better!

1 cup butter
2/3 cup sugar
1 egg
1 tsp vanilla
1 tsp. salt
2 1/2 cups flour

Cream together butter and sugar. Beat in egg. Add vanilla, salt, and flour. Mix until all ingredients are well blended. Divide in half and spread onto 2 pizza stones. Bake at 350 for 8-10 minutes or until lightly browned. Cool completely.

The Topping:
Beat an 8 ounce package of cream cheese with 2 cups powdered sugar, 1/2 tsp vanilla and 1/4 tsp salt. Spread over cooled crusts. Top with your favorite fruit....Kiwi, strawberries, raspberries, blueberries, fresh peaches, etc.
