CPK's Jamaican Jerk Pizza

Oh, baby! I think I have a NEW FAVORITE PIZZA!!! I made this pizza a few days ago and it was INCREDIBLE! Definitely worth the extra few steps!! I highly recommend it :)

Jerk Chicken Pieces
1/2 pound boneless, skinless chicken breast
1 teaspoon olive oil
2 teaspoons jerk seasoning

Caribbean Sauce
3/4 cup chili sauce
1 heaping teaspoon jerk seasoning

For the Pizza
8 ounces pizza dough
Caribbean Sauce
1 cup mozzarella
1/4 cup red and yellow peppers (diced)
1/4 cup sliced yellow onions (diced)
1/4 cup crispy bacon (cooked and crumbled)
13 to 15 pieces Jerk Chicken (3/4-inch)
Sprinkling of additional mozzarella
1 tablespoon chopped green onions (diced)

To make the chicken:

Slice chicken into thin pieces. Saute until done, stir in jerk seasoning. Set aside.


To make Caribbean Sauce:
In a sauce pan, combine chili sauce and jerk seasoning. Mix thoroughly. Cook over high flame for approximately 5 to 6 minutes. Stir continuously. Remove from heat and set aside.


To make the pizza:
Use a spoon to spread the Caribbean sauce to within an inch of the outer edge of a stretched pizza dough. Sprinkle mozzarella over the Caribbean sauce, then roasted peppers, yellow onions, green onions, bacon, jerk chicken and finally the rest of the mozzarella over the entire pizza.


Bake at 425 for 15-20 minutes until edges are lightly brown, cheese is melted, and the underneath crust looks done.

Okay so I am going to make this this week. It is my favorite pizza at CPK. So you make all the carribean sauce then you only use a 1/2 teaspoon? Am I reading it wrong?
