Chicken with Chile-Cheese Rice





2 t. olive oil
1 1/2 lbs. boneless skinless chicken breasts, cut into strips
1 t. salt
1/2 t. pepper
1 med. onion chopped
3 garlic cloves, chopped
1 jalapeno chili-chopped (optional -more or less to taste)
1 c. white rice
2 c. chicken broth
1 can chopped green chiles
1 c. grated cheddar, jack or combo of cheese
1 c. chopped cilantro

Heat olive oil and saute onion, garlic and jalapeno chiles if using.  Add chicken and saute until cooked through.  Add rice, chicken broth, caned chiles and reduce heat.  Cover and simmer until rice is cooked, about 20 min.  Stir in cilantro and cheese and then serve.
