Garlic Chicken with Sundried Tomatoes

Ingredients:
  • 4 boneless, skinless chicken breasts
  • 5-8 large garlic cloves
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 1/2 cup sun-dried tomatoes (not packed in oil), chopped
  • 1/4 cup white cooking wine
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • salt and pepper


Directions:
  • Place a couple of tablespoons of olive oil in a medium skillet. Mince the cloves of garlic , and place them in the skillet. Rub the chicken breasts generously with salt and pepper.
  • Cook the chicken for 2-4 minutes on each side, or until it is browned. Remove the chicken from the skillet.
  • Lay the onions, green peppers, and tomatoes in baking pan. Top with browned chicken.
  • Pour cooking wine and chicken broth along with oregano into pan used to brown the chicken. Simmer, scraping to remove bits of garlic.
  • Pour over chicken.
  • Cover and bake at 350 degrees F for 25-30 minutes.
