Pumpkin Cake


This is one of my very favorite pumpkin recipes and is always a huge hit! Serve warm with a scoop of vanilla ice cream or straight out of the pan for breakfast the next morning :) Whatever floats your boat!!!

Crust:

1 box yellow cake mix (not pudding kind)
*RESERVE 1 C. FOR TOPPING
1/2 C. melted butter
1 egg
Mix and spread in greased 9x13 pan
Filling:

29 oz. can of pumpkin
2 1/2 tsp. pumpkin spice
1 1/2 C. brown sugar
3 eggs
2/3 cup evaporated milk
Mix and pour over crust

Topping:

1 C. reserved cake mix
1/4 C. sugar
1 tsp cinnamon
1/4 C. butter (softened)
Mix with pastry blender or two knives and crumble over filling.

Bake at 350 degrees for 50-55 minutes.

I love these and make these all the time! My family recipe calls for a cream cheese layer in the middle too, which makes them extra yummy!
