This past weekend, my friend Kalie and I hosted a baby shower for our friend Ashley
who is expecting her first little boy this December.
With delicious food and great company, it was such a fun afternoon.
Over the next couple of days I'll post a few of the recipes,
including Kalie's to die for Chocolate Cupcakes filled with Chocolate Mousse and Chocolate frosting.

This was probably the favorite salad of the afternoon.
The maple dressing really gives it such a unique and DELICIOUS flavor!
We loved it so much, we made if for dinner the next night :)

- 1/4 cup maple syrup
- 3 tablespoons minced shallots (about 1 medium)
- 2 tablespoons red wine vinegar
- 1 tablespoon canola oil
- 1 tablespoon country-style Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 garlic clove, minced
- 1/2 cup vertically sliced red onion
- 1/2 cup chopped Fuji apple
- 4 bacon slices, cooked and crumbled
- 1 (10-ounce) package fresh spinach

Dressing:
1/4 C. oil
2 TBSP Mayo
2 TBSP Apple Cider Vinegar
2 TBSP Maple Syrup
Salad:
I like to use Spring Mix but whatever you like throw in.
dried cranberries
feta cheese
red onion
glazed walnuts
(we add alvacado because it goes good on everything)
Toss salad in dressing and enjoy. Try it... you will LOVE it.
