This is a quick, delicious and very healthy way to enjoy salmon that I found in a Martha Stewart magazine. I love the flash-frozen filets from Costco. I quick-thaw them in their pouches in a bowl of water and they are ready to bake in just a few minutes. I served it with stir-fry vegetables and steamed brown rice.
Preheat oven to 450 degrees.
Mix in a bowl:
1/4 cup olive oil
1/4 cup brown sugar
3 T. soy sauce
2 T. fresh lemon juice
2 T. dry white wine (or water)
Salt and pepper the filets. Place in a oven proof baking dish. Pour the glaze over the top. Turn the filets to coat all sides. Place in hot oven and bake for 15-20 minutes or until salmon is opaque but still bright pink inside. Baste a few times while baking. Serve with lemon wedges if desired.
