Baked Shrimp in Tomato Feta Sauce

Baked Shrimp in Tomato Feta Sauce

Olive oil
1 med. Yellow onion-chopped
1-3 cloves garlic-minced
2 -14 oz cans of diced tomatoes
¼ cup minced fresh parsley (or 1 T. dried)
¼ cup minced fresh basil (or 1 T. dried)
About 1 lb. medium sized raw shrimp, peeled and deveined (you can leave tails on) Thaw if frozen.
Salt and cayenne pepper to taste
3 oz. (about 2/3 cup) feta cheese

Saute onion and garlic in olive oil until soft. Add tomatoes and simmer for about 10 minutes. Remove from heat and stir in shrimp, herbs, feta, and salt and pepper to taste.

Place oven proof skillet (or transfer to a oven proof casserole dish) in oven and bake uncovered for about 10-15 minutes.

Serve immediately.
