This is a delicious (and healthy!) rendition of the classic Chicken Salad Sandwich
that can be served on croissants (not so healthy) or in lettuce cups.
- 1 cup cooked chicken breast, shredded or diced
- 1/4 cup celery, thinly diced
- 1-2 green onions, thinly diced
- 1/2 cup plain Greek-style yogurt
- 1/2 cup red grapes, halved
- handful of slivered almonds
- 2 tsp lemon juice
- 1 tsp yellow mustard (or to taste)
- salt and pepper, to taste
