Chicken Salad Sandwich


This is a delicious (and healthy!) rendition of the classic Chicken Salad Sandwich
that can be served on croissants (not so healthy) or in lettuce cups.

  • 1 cup cooked chicken breast, shredded or diced
  • 1/4 cup celery, thinly diced
  • 1-2 green onions, thinly diced
  • 1/2 cup plain Greek-style yogurt
  • 1/2 cup red grapes, halved
  • handful of slivered almonds
  • 2 tsp lemon juice
  • 1 tsp yellow mustard (or to taste)
  • salt and pepper, to taste
