Coconut Rice
















I have my niece, Amber to thank for this one. This has been the most requested recipe I've made in a long time. Even my mom who claims she doesn't like coconut, loved this dish. This was part of the fabulous menu we served at Erin and Chance's wedding reception....along with Sesame Beef Sticks, wok charred vegetables, and Asian Orange Salad.

2 cups coconut milk
1 1/2 cups Jasmine rice
1 cup water
3 T. sugar
1/2 tsp. salt

Add all ingredients together. Stir and bring to a boil. Reduce heat to low and cover. Cook for 15-20 minutes.
