Pumpkin Apple Streusel Muffins

Fall is quickly approaching and one of my favorite things about Fall and the holiday season is all of the baking... especially recipes with Pumpkin! This muffin recipe is DELICIOUS and will have you making excuses to eat them for breakfast, lunch, and dinner!

2 1/2 cups flour
2 cups sugar
1 Tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs (beaten)
1 cup solid pack pumpkin
1/2 cup olive oil
2 cup finely chopped apples (pealed)

Combine Ingredients, spoon into cupcake pans and sprinkle with streusel topping.

Streusel Topping:
1 cup flour
1 cup brown sugar
1/2 cup butter (melted)
1 tsp. cinnamon

Bake at 350 degrees for 35-40 minutes.
