I usually know when I read a recipe, whether I'm going to like it or not. Maybe after all these years of eating and cooking, words of a recipe can almost create a taste in my mouth. Such was the case with these Breakfast Cookies. I made them and loved them and brought them to Joy, my favorite fitness instructor. Then there was the request from the class for the recipe. Here it is....
2 c. old fashioned oats
1 ¼ cups whole wheat flour
1 c. all purpose flour
1 c. Grape-Nuts cereal
½ c. wheat germ
½ c. oat bran
2 tsp. baking soda
1 c. butter, room temperature
1 c. peanut butter
2 lg. eggs
1 c. packed brown sugar
½ c. white sugar
1 T. vanilla
1 c. almonds, toasted and coarsely chopped
1 c. raisins
1 c. chopped pitted dates
Mix all dry ingredients in a large bowl to blend. Using electric mixer in another bowl, beat butter and peanut butter until creamy. Add eggs, both sugars and vanilla. Beat until smooth. Add cereal mixture; stir until blended. Mix in almonds, raisins, and dates.
Line baking sheets with parchment paper. Using 2 ounce ice cream scoop or ¼ c. measuring cup, scoop dough onto prepared baking sheets, spacing mounds 2 inches apart. Using the bottom of a glass, press cookies to ½ inch-thick rounds.
Bake cookies at 350 degrees for about 15 minutes. Let cool on sheets for about 10 minutes before removing.
This makes about 24 medium sized cookies. Two of them along with a glass of milk and a banana is a very satisfying breakfast you can eat on your way somewhere!!
