Chicken with Brie and Apricots
If you're looking for a special something to whip up for a special someone, this one is a winner and it won't require much time in the kitchen!
4 boneless, skinless chicken breasts
2 T. olive oil
8 oz. Brie cheese-quartered
8 T. apricot preserves
1/2 cup slivered almonds (the round, flat kind)
Pound chicken between plastic wrap to 1/4 inch thickness. (You may use 1/2 breasts to make smaller servings) Brown chicken pieces on both sides in olive oil. Season with salt and pepper on 2nd side. Arrange in a pretty baking dish. Top each piece with a quarter of the Brie cheese and
2 T. apricot preserves. Sprinkle slivered almonds on top. Bake in preheated 400 degree oven for about 7 minutes or until Brie has started to melt and almonds are toasted.

Holy cow that sounds amazing. I have a food blog too! I mostly post baking stuff, and my pictures totally suck, but it's fun and I like doing it. :)
