Macadamia Nut Crusted Mahi Mahi


Emma can't believe I haven't shared this one yet....a recipe that comes highly recommended by her!!

About 1 1/4 cups of coarsely ground, roasted Macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 T. flour
1/4 cup butter, melted
4 (6-8 oz.) Mahi Mahi fillets
sea salt and pepper
2 T. coconut milk

Preheat oven to 450 degrees. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
Place a piece of foil on a baking sheet and spray liberally with non-stick coating. Place the fillets on the foil and sprinkle each with salt and pepper on both sides. Bake for 5 minutes.
Remove from oven and brush each fillet with coconut milk. Divide the nut mixture among the tops of the four fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5-10 minutes or until crumb mixture is golden brown. Serve immediately.
(a great idea for the left over coconut milk is to use it in the coconut rice recipe posted under rice dishes-a great compliment to the fish!)
