Rice and Edamame Salad

Every once in awhile I create something out of leftovers that is REALLY good!

2 cups cooked brown rice
1 cup edamame
1 cup diced, steamed zucchini
1 cup diced red bell pepper
1/4 cup diced red onion

Dressing:
1/4 cup olive oil
1/4 cup rice wine vinegar
1 tsp sugar
1 tsp salt
cayenne pepper to taste

Combine dressing ingredients. Pour over rice and vegetables. Toss to combine. Refrigerate.
